Ingredients:  

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 tsp Cumin
  • 1 tsp Paprika
  • to taste Salt and Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and cook until translucent, about 5 minutes.
  • 3. Stir in the minced garlic, cumin, and paprika, and cook for another minute.
  • 4. Add the rinsed lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  • 5. Reduce the heat to low, cover, and simmer for 30-35 minutes, or until the lentils are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

You can add some chopped spinach or kale at the end for extra greens.
