Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until translucent, about 5 minutes.
3. Stir in the minced garlic, cumin, and paprika, and cook for another minute.
4. Add the rinsed lentils, diced tomatoes, and vegetable broth. Bring to a boil.
5. Reduce the heat to low, cover, and simmer for 30-35 minutes, or until the lentils are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
You can add some chopped spinach or kale at the end for extra greens.
