Ingredients:  

Main Ingredients

  • 1 lb Chicken thighs, boneless and skinless cut into bite-sized pieces
  • 1 pint Fresh oysters shucked
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 tbsp Butter
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste
  • 1 tbsp Fresh parsley chopped, for garnish

Instructions: 

  • 1. In a large pot, melt the butter over medium heat.
  • 2. Add the diced onion and minced garlic, sauté until translucent.
  • 3. Add the chicken pieces to the pot, cook until browned on all sides.
  • 4. Pour in the chicken broth and bring to a simmer.
  • 5. Add the heavy cream, salt, and black pepper. Stir well.
  • 6. Add the shucked oysters and simmer for another 10 minutes.
  • 7. Garnish with chopped fresh parsley before serving.

Notes:

For a thicker stew, you can add a slurry of cornstarch and water during the simmering process.
