Ingredients:  

Main Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tomatoes, chopped
  • 1 cup tamarind pulp
  • 2 cups water
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1 cup vegetables (carrots, potatoes, etc.), chopped
  • Fresh cilantro for garnish

Instructions: 

  • Heat oil in a pot over medium heat. Add onions and sauté until golden brown.
  • Add garlic and ginger, cook for another minute.
  • Stir in tomatoes and cook until they soften.
  • Add tamarind pulp, water, cumin, coriander, salt, turmeric, and chili powder. Bring to a boil.
  • Add chopped vegetables and simmer until they are tender, about 30 minutes.
  • Garnish with fresh cilantro before serving.

Notes:

Adjust the amount of tamarind pulp based on your taste preference.
