Fresh cilantro for garnish
Instructions:
Heat oil in a pot over medium heat. Add onions and sauté until golden brown.
Add garlic and ginger, cook for another minute.
Stir in tomatoes and cook until they soften.
Add tamarind pulp, water, cumin, coriander, salt, turmeric, and chili powder. Bring to a boil.
Add chopped vegetables and simmer until they are tender, about 30 minutes.
Garnish with fresh cilantro before serving.
Notes:
Adjust the amount of tamarind pulp based on your taste preference.
