Ingredients:  

Main Ingredients

  • 8 Garden eggs (African eggplants) chopped
  • 2 cups Tomatoes chopped
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Ginger grated
  • 1 cup Palm oil
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions: 

  • Heat the palm oil in a large pot over medium heat.
  • Add the chopped onions and sauté until translucent.
  • Stir in the minced garlic and grated ginger, cook for another minute.
  • Add the chopped tomatoes and cook until they break down and form a sauce.
  • Add the chopped garden eggs, salt, and pepper. Stir well to combine.
  • Cover the pot and let it simmer for about 20 minutes, stirring occasionally.
  • Serve hot with rice or boiled yams.

Notes:

Adjust the seasoning to your taste. You can also add some smoked fish or meat for extra flavor.
