Instructions:
Heat the palm oil in a large pot over medium heat.
Add the chopped onions and sauté until translucent.
Stir in the minced garlic and grated ginger, cook for another minute.
Add the chopped tomatoes and cook until they break down and form a sauce.
Add the chopped garden eggs, salt, and pepper. Stir well to combine.
Cover the pot and let it simmer for about 20 minutes, stirring occasionally.
Serve hot with rice or boiled yams.
Notes:
Adjust the seasoning to your taste. You can also add some smoked fish or meat for extra flavor.
