Ingredients:  

Main Ingredients

  • 2 lbs Beef Chuck cut into cubes
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Sour Cream
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste

Instructions: 

  • 1. Heat the pot over medium-high heat and add a bit of oil.
  • 2. Brown the beef cubes in batches, setting them aside once browned.
  • 3. In the same pot, sauté the onions until translucent, then add the garlic and cook for another minute.
  • 4. Return the beef to the pot and add the beef broth. Bring to a boil, then reduce to a simmer.
  • 5. Add the carrots and potatoes. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
  • 6. Stir in the sour cream and season with salt and pepper to taste. Let it heat through for a few minutes.
  • 7. Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. Serve with crusty bread for a complete meal.
