Instructions:
1. Heat the pot over medium-high heat and add a bit of oil.
2. Brown the beef cubes in batches, setting them aside once browned.
3. In the same pot, sauté the onions until translucent, then add the garlic and cook for another minute.
4. Return the beef to the pot and add the beef broth. Bring to a boil, then reduce to a simmer.
5. Add the carrots and potatoes. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
6. Stir in the sour cream and season with salt and pepper to taste. Let it heat through for a few minutes.
7. Serve hot and enjoy!

This stew is perfect for a cozy dinner. Serve with crusty bread for a complete meal.
