Instructions:
1. In a large pot, heat some oil over medium heat.
2. Add the muskrat meat and brown on all sides.
3. Add the onion and garlic, and cook until softened.
4. Add the potatoes, carrots, and celery. Stir to combine.
5. Pour in the beef broth and bring to a boil.
6. Reduce heat to low, cover, and simmer for about 2 hours, or until the meat is tender.
7. Season with salt, pepper, thyme, and rosemary. Adjust seasoning to taste.
8. Serve hot and enjoy!
Notes:
This stew is best enjoyed with some crusty bread on the side.
