Ingredients:  

Main Ingredients

  • 2 lbs Muskrat meat cleaned and cut into pieces
  • 2 cups Potatoes diced
  • 1 cup Carrots sliced
  • 1 cup Celery chopped
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef broth
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 2 tsp Thyme dried
  • 2 tsp Rosemary dried

Instructions: 

  • 1. In a large pot, heat some oil over medium heat.
  • 2. Add the muskrat meat and brown on all sides.
  • 3. Add the onion and garlic, and cook until softened.
  • 4. Add the potatoes, carrots, and celery. Stir to combine.
  • 5. Pour in the beef broth and bring to a boil.
  • 6. Reduce heat to low, cover, and simmer for about 2 hours, or until the meat is tender.
  • 7. Season with salt, pepper, thyme, and rosemary. Adjust seasoning to taste.
  • 8. Serve hot and enjoy!

Notes:

This stew is best enjoyed with some crusty bread on the side.
