Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat cut into chunks
  • 1 cup Prunes pitted and halved
  • 2 Carrots sliced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 tbsp Tomato Paste
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper to taste
  • 2 tbsp Olive Oil

Instructions: 

  • Heat olive oil in a Dutch oven over medium-high heat.
  • Add beef chunks and brown on all sides. Remove and set aside.
  • In the same pot, add onions and garlic, and sauté until softened.
  • Stir in tomato paste, then add beef broth, carrots, prunes, salt, and pepper.
  • Return beef to the pot. Bring to a boil, then reduce heat and simmer for 2 hours.
  • Serve hot and enjoy!

This stew is perfect for a cozy dinner.
