Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic, sauté until softened.
Add diced tomatoes and cook for another 5 minutes.
Pour in fish stock and bring to a simmer.
Add diced potatoes, salt, and black pepper. Simmer for 20 minutes.
Add swordfish chunks and cook for another 10 minutes, or until fish is cooked through.
Garnish with chopped fresh parsley before serving.
Notes:
Serve with crusty bread for a complete meal.
