Ingredients:  

Main Ingredients

  • 1 lb Swordfish steaks cut into chunks
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Tomatoes diced
  • 2 cups Fish stock
  • 1 cup Potatoes diced
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tbsp Fresh parsley chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic, sauté until softened.
  • Add diced tomatoes and cook for another 5 minutes.
  • Pour in fish stock and bring to a simmer.
  • Add diced potatoes, salt, and black pepper. Simmer for 20 minutes.
  • Add swordfish chunks and cook for another 10 minutes, or until fish is cooked through.
  • Garnish with chopped fresh parsley before serving.

Notes:

Serve with crusty bread for a complete meal.
