Instructions:
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until translucent.
Add carrots, celery, and red bell pepper, cook for 5 minutes.
Stir in zucchini, chickpeas, diced tomatoes, and vegetable broth.
Add cumin, coriander, turmeric, cinnamon, ginger, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Stir in cilantro and raisins (if using) before serving.
Notes:
Feel free to adjust the spices to your taste.
