Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can chickpeas, drained and rinsed 15 oz
  • 1 can diced tomatoes 15 oz
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • Salt and pepper to taste
  • 0.25 cup chopped fresh cilantro
  • 0.25 cup raisins (optional)

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, sauté until translucent.
  • Add carrots, celery, and red bell pepper, cook for 5 minutes.
  • Stir in zucchini, chickpeas, diced tomatoes, and vegetable broth.
  • Add cumin, coriander, turmeric, cinnamon, ginger, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Stir in cilantro and raisins (if using) before serving.

Notes:

Feel free to adjust the spices to your taste.
