Instructions:
1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
2. Add the cleaned and trimmed chicken gizzards to the pot. Cook until they are browned on all sides.
3. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 30 minutes.
4. Add the sliced carrots and diced potatoes to the pot. Season with salt, black pepper, paprika, and thyme. Stir well to combine.
5. Cover the pot again and let it simmer for another 30 minutes, or until the vegetables are tender and the gizzards are cooked through.
6. Taste and adjust the seasoning if necessary. Serve hot and enjoy!
Notes:
This stew is even better the next day, as the flavors have more time to meld together.
