Ingredients:  

Main Ingredients

  • 1 lb chicken gizzards cleaned and trimmed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup carrots sliced
  • 2 cups potatoes diced
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper freshly ground
  • 1 tsp paprika
  • 1 tsp thyme dried

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
  • 2. Add the cleaned and trimmed chicken gizzards to the pot. Cook until they are browned on all sides.
  • 3. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 30 minutes.
  • 4. Add the sliced carrots and diced potatoes to the pot. Season with salt, black pepper, paprika, and thyme. Stir well to combine.
  • 5. Cover the pot again and let it simmer for another 30 minutes, or until the vegetables are tender and the gizzards are cooked through.
  • 6. Taste and adjust the seasoning if necessary. Serve hot and enjoy!

Notes:

This stew is even better the next day, as the flavors have more time to meld together.
