Instructions:
In a large pot, brown the beef stew meat over medium heat.
Add the chopped onion and garlic, cook until softened.
Pour in the beef broth and add the carrots, potatoes, salt, pepper, thyme, and bay leaf.
Bring to a boil, then reduce heat and simmer for 2 hours, or until the meat is tender.
Remove the bay leaf before serving.
