Ingredients:  

Main Ingredients

  • 2 lbs Lamb shoulder, cut into chunks
  • 2 tbsp Olive oil
  • 1 Large onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Red wine
  • 2 cups Beef broth
  • 2 Carrots, sliced
  • 2 Potatoes, diced
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the lamb chunks and brown on all sides.
  • Add the chopped onion and minced garlic, and cook until softened.
  • Pour in the red wine and beef broth, and bring to a boil.
  • Add the carrots, potatoes, dried thyme, salt, and black pepper.
  • Reduce heat to low, cover, and simmer for about 2 hours, or until the lamb is tender.
  • Serve hot and enjoy!

Notes:

This lamb stew is even better the next day, so feel free to make it ahead of time.
