Instructions:
Heat the olive oil in a large pot over medium heat.
Add the lamb chunks and brown on all sides.
Add the chopped onion and minced garlic, and cook until softened.
Pour in the red wine and beef broth, and bring to a boil.
Add the carrots, potatoes, dried thyme, salt, and black pepper.
Reduce heat to low, cover, and simmer for about 2 hours, or until the lamb is tender.
Serve hot and enjoy!
Notes:
This lamb stew is even better the next day, so feel free to make it ahead of time.
