Ingredients:  

Main Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 1 lb Beef Stew Meat
  • 2 cups Carrots chopped
  • 2 cups Potatoes chopped
  • 1 cup Onion chopped
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 2 cloves Garlic minced
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tbsp Olive Oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken and beef, cook until browned on all sides.
  • Add onions and garlic, cook until softened.
  • Stir in tomato paste, cook for 2 minutes.
  • Add beef broth, carrots, and potatoes. Bring to a boil.
  • Reduce heat, cover, and simmer for 1.5 to 2 hours, until meat is tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Feel free to add other vegetables like peas or corn.
