Instructions:
Heat olive oil in a large pot over medium heat.
Add chicken and beef, cook until browned on all sides.
Add onions and garlic, cook until softened.
Stir in tomato paste, cook for 2 minutes.
Add beef broth, carrots, and potatoes. Bring to a boil.
Reduce heat, cover, and simmer for 1.5 to 2 hours, until meat is tender.
Season with salt and pepper to taste. Serve hot.
Notes:
This stew is perfect for a cozy dinner. Feel free to add other vegetables like peas or corn.
