Instructions:
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the chopped onion and minced garlic, cook until softened.
3. Stir in the tomato paste, cook for another minute.
4. Add the beef broth, carrots, parsnips, potatoes, thyme, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 45 minutes to an hour, until the meat and vegetables are tender.

Feel free to adjust the seasoning to your taste.
