Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into cubes
  • 1 cup Carrots sliced
  • 1 cup Parsnips sliced, substitute for celery
  • 1 cup Potatoes diced
  • 1 large Onion chopped
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 2 cloves Garlic minced
  • 1 tsp Thyme dried
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • 1. In a large pot, brown the beef stew meat over medium heat.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Stir in the tomato paste, cook for another minute.
  • 4. Add the beef broth, carrots, parsnips, potatoes, thyme, salt, and pepper.
  • 5. Bring to a boil, then reduce heat and simmer for 45 minutes to an hour, until the meat and vegetables are tender.

Notes:

Feel free to adjust the seasoning to your taste.
