Ingredients:  

Main Ingredients

  • 3 ripe plantains peeled and chopped
  • 1 cup tomato sauce
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cups vegetable broth

Instructions: 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until fragrant.
  • Add the chopped plantains and cook for about 5 minutes.
  • Pour in the tomato sauce and vegetable broth, then add salt and black pepper.
  • Bring to a boil, then reduce heat and simmer for 20-25 minutes, until plantains are tender.
  • Serve hot and enjoy!

This stew pairs well with rice or bread.
