Instructions:
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion and minced garlic, and sauté until fragrant.
Add the chopped plantains and cook for about 5 minutes.
Pour in the tomato sauce and vegetable broth, then add salt and black pepper.
Bring to a boil, then reduce heat and simmer for 20-25 minutes, until plantains are tender.
Serve hot and enjoy!
