Kale, chopped
Instructions:
1. Rinse quinoa under cold water.
2. In a large pot, heat olive oil over medium heat. Add onion and garlic, cook until softened.
3. Add carrot and zucchini, cook for another 5 minutes.
4. Stir in diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil.
5. Add quinoa, reduce heat, and simmer for 20 minutes.
6. Stir in kale and cook for another 5 minutes.
7. Serve hot and enjoy!
Notes:
Feel free to add more veggies or spices to suit your taste.
