Ingredients:  

Main Ingredients

  • 1 cup Quinoa
  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Carrot, diced
  • 1 Zucchini, diced
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Vegetable Broth
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 cup Kale, chopped

Instructions: 

  • 1. Rinse quinoa under cold water.
  • 2. In a large pot, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  • 3. Add carrot and zucchini, cook for another 5 minutes.
  • 4. Stir in diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil.
  • 5. Add quinoa, reduce heat, and simmer for 20 minutes.
  • 6. Stir in kale and cook for another 5 minutes.
  • 7. Serve hot and enjoy!

Notes:

Feel free to add more veggies or spices to suit your taste.
