Ingredients:  

Main Ingredients

  • 1 lb Chicken Breast diced
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 1 can Diced Tomatoes with green chilies
  • 1 cup Chicken Broth
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat a large pot over medium heat.
  • 2. Add diced chicken breast and cook until browned.
  • 3. Add black beans, corn, diced tomatoes, and chicken broth.
  • 4. Stir in chili powder, cumin, garlic powder, and onion powder.
  • 5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 6. Season with salt and pepper to taste.
  • 7. Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. You can add some shredded cheese or a dollop of sour cream on top for extra flavor.
