Instructions:
1. Clean and cut the beef tripe into bite-sized pieces.
2. In a large pot, sauté the chopped onion and minced garlic until fragrant.
3. Add the beef tripe to the pot and cook for about 5 minutes.
4. Add the sliced carrots, diced potatoes, paprika, salt, and black pepper. Stir well.
5. Pour in the beef broth and bring to a boil.
6. Reduce the heat to low and let it simmer for about 2 hours, or until the tripe is tender.
7. Adjust seasoning if needed. Serve hot.
