Ingredients:  

Main Ingredients

  • 1 kg Pork shoulder cut into chunks
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Red wine
  • 2 cups Chicken broth
  • 1 tbsp Tomato paste
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried
  • to taste Salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the pork chunks and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the chopped onion and minced garlic. Cook until softened.
  • 4. Add the carrots and potatoes. Cook for a few minutes.
  • 5. Pour in the red wine and chicken broth. Stir in the tomato paste, thyme, and rosemary.
  • 6. Return the pork to the pot. Bring to a boil, then reduce heat to low and simmer for 2 hours.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat gently.
