Pork shoulder

Salt and pepper
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the pork chunks and brown on all sides. Remove and set aside.
3. In the same pot, add the chopped onion and minced garlic. Cook until softened.
4. Add the carrots and potatoes. Cook for a few minutes.
5. Pour in the red wine and chicken broth. Stir in the tomato paste, thyme, and rosemary.
6. Return the pork to the pot. Bring to a boil, then reduce heat to low and simmer for 2 hours.
7. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat gently.
