Instructions:
1. Heat the large pot over medium heat.
2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
3. Add the carrots and potatoes. Cook for about 5 minutes.
4. Pour in the vegetable broth and bring to a boil.
5. Add the broccoli florets, salt, and black pepper. Reduce heat and simmer for 20 minutes.
6. Serve hot and enjoy!
