Instructions:
1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
2. Add chopped onion and minced garlic to the pot. Cook until onion is translucent.
3. Stir in tomato paste, beef broth, salt, pepper, thyme, and rosemary. Bring to a boil.
4. Reduce heat to low, cover, and simmer for 1.5 hours.
5. Add carrots and potatoes. Simmer for another 30 minutes until vegetables are tender.
6. Adjust seasoning if needed. Serve hot.
Notes:
For a richer flavor, you can add a splash of red wine while simmering.
