Ingredients:  

Main Ingredients

  • 1 kg Beef chuck cut into cubes
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 3 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 Carrots sliced
  • 3 Potatoes diced
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  • 2. Add chopped onion and minced garlic to the pot. Cook until onion is translucent.
  • 3. Stir in tomato paste, beef broth, salt, pepper, thyme, and rosemary. Bring to a boil.
  • 4. Reduce heat to low, cover, and simmer for 1.5 hours.
  • 5. Add carrots and potatoes. Simmer for another 30 minutes until vegetables are tender.
  • 6. Adjust seasoning if needed. Serve hot.

Notes:

For a richer flavor, you can add a splash of red wine while simmering.
