Ingredients:  

Main Ingredients

  • 2 cups Cassava leaves finely chopped
  • 1 lb Beef cut into chunks
  • 1 cup Peanut butter
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Vegetable oil
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 4 cups Water

Instructions: 

  • 1. Heat the vegetable oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • 3. Add the beef chunks and cook until browned on all sides.
  • 4. Stir in the chopped cassava leaves and cook for another 5 minutes.
  • 5. Add the peanut butter, salt, and black pepper. Mix well.
  • 6. Pour in the water and bring the mixture to a boil.
  • 7. Reduce the heat to low and let it simmer for about 45 minutes, or until the beef is tender and the flavors are well combined.
  • 8. Adjust seasoning if necessary and serve hot.

Notes:

This stew is best served with rice or fufu.
