Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
3. Add the beef chunks and cook until browned on all sides.
4. Stir in the chopped cassava leaves and cook for another 5 minutes.
5. Add the peanut butter, salt, and black pepper. Mix well.
6. Pour in the water and bring the mixture to a boil.
7. Reduce the heat to low and let it simmer for about 45 minutes, or until the beef is tender and the flavors are well combined.
8. Adjust seasoning if necessary and serve hot.
Notes:
This stew is best served with rice or fufu.
