Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
3. Add the chopped carrots and celery, and cook for another 5 minutes.
4. Stir in the diced tomatoes, vegetable broth, lentils, thyme, rosemary, salt, and pepper.
5. Bring to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the lentils are tender.
6. Adjust seasoning to taste and serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
