New Mexico Posole Stew

Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder cut into cubes
  • 1 large Onion chopped
  • 4 cloves Garlic minced
  • 2 cups Hominy drained and rinsed
  • 6 cups Chicken broth
  • 2 tsp Ground cumin
  • 1 tsp Oregano
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste

Instructions: 

  • 1. In a large pot, brown the pork shoulder over medium heat.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Stir in the hominy, chicken broth, ground cumin, and oregano.
  • 4. Bring to a boil, then reduce heat and simmer for 2 hours.
  • 5. Season with salt and black pepper to taste before serving.

Notes:

For a spicier stew, add some chopped green chilies or a dash of red chili powder.
