Instructions:
1. Rinse the beef neck bones under cold water and pat dry.
2. In a large pot, heat a bit of oil over medium heat. Add the beef neck bones and brown on all sides.
3. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
4. Stir in the tomato paste, beef broth, and water. Bring to a boil.
5. Reduce the heat to low, cover, and let it simmer for about 2 hours.
6. Add the sliced carrots and diced potatoes. Continue to simmer for another hour or until the vegetables are tender.
7. Season with salt and black pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like celery or peas.
