Ingredients:  

Main Ingredients

  • 2 lbs Beef neck bones
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Beef broth
  • 2 cups Water
  • 2 tbsp Tomato paste
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste

Instructions: 

  • 1. Rinse the beef neck bones under cold water and pat dry.
  • 2. In a large pot, heat a bit of oil over medium heat. Add the beef neck bones and brown on all sides.
  • 3. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 4. Stir in the tomato paste, beef broth, and water. Bring to a boil.
  • 5. Reduce the heat to low, cover, and let it simmer for about 2 hours.
  • 6. Add the sliced carrots and diced potatoes. Continue to simmer for another hour or until the vegetables are tender.
  • 7. Season with salt and black pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like celery or peas.
