Ingredients:

diced tomatoes

dried thyme

dried oregano
Salt and pepper to taste

olive oil
Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion, garlic, carrots, and celery. Sauté until vegetables are tender.
Add chicken breasts to the pot and pour in chicken broth and diced tomatoes.
Stir in thyme, oregano, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Remove chicken breasts, shred them with two forks, and return to the pot.
Simmer for another 15 minutes.
Notes:
Serve hot with crusty bread.
