Ingredients:  

Main Ingredients

  • 2 lbs chicken breasts
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can diced tomatoes 14.5 oz
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, garlic, carrots, and celery. Sauté until vegetables are tender.
  • Add chicken breasts to the pot and pour in chicken broth and diced tomatoes.
  • Stir in thyme, oregano, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Remove chicken breasts, shred them with two forks, and return to the pot.
  • Simmer for another 15 minutes.

Notes:

Serve hot with crusty bread.
