1. Clean the chicken gizzards thoroughly and cut them into bite-sized pieces.
2. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
3. Add the gizzards to the pot and cook until they are browned on all sides.
4. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for about 45 minutes, or until the gizzards are tender.
5. Add the sliced carrots and diced potatoes to the pot. Season with salt and black pepper to taste. Continue to simmer for another 30 minutes, or until the vegetables are cooked through.
