Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion, garlic, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
3. Add soaked white beans, vegetable broth, thyme, and rosemary. Bring to a boil.
4. Reduce heat to low and let simmer for 45 minutes or until beans are tender.
5. Season with salt and black pepper to taste. Serve hot.
Notes:
This stew is even better the next day, so consider making it ahead of time.
