Ingredients:  

Main Ingredients

  • 2 cups Dried white beans soaked overnight
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 Carrots chopped
  • 2 stalks Celery chopped
  • 4 cups Vegetable broth
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion, garlic, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
  • 3. Add soaked white beans, vegetable broth, thyme, and rosemary. Bring to a boil.
  • 4. Reduce heat to low and let simmer for 45 minutes or until beans are tender.
  • 5. Season with salt and black pepper to taste. Serve hot.

Notes:

This stew is even better the next day, so consider making it ahead of time.
