Ingredients:  

Main Ingredients

  • 1 lb Beef stew meat cut into cubes
  • 4 Potatoes peeled and cubed
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced tomatoes
  • 2 cups Beef broth
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • to taste Salt and pepper

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the beef and cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the diced tomatoes, beef broth, cumin, and chili powder. Bring to a boil.
  • 4. Add the cubed potatoes to the pot. Reduce the heat and let it simmer for about 45 minutes, or until the beef and potatoes are tender.
  • 5. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day, as the flavors have more time to meld together.
