Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 200 g chorizo, sliced
  • 400 g canned chickpeas, drained and rinsed
  • 400 g canned tomatoes
  • 500 ml chicken stock
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Stir in the minced garlic and sliced chorizo, cooking for another 3 minutes.
  • Add the chickpeas, canned tomatoes, chicken stock, smoked paprika, salt, and black pepper. Stir to combine.
  • Bring the stew to a boil, then reduce the heat and let it simmer for 20 minutes.
  • Serve hot and enjoy!

Notes:

Feel free to add some spinach or kale for extra greens.
