Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic and sliced chorizo, cooking for another 3 minutes.
Add the chickpeas, canned tomatoes, chicken stock, smoked paprika, salt, and black pepper. Stir to combine.
Bring the stew to a boil, then reduce the heat and let it simmer for 20 minutes.
Serve hot and enjoy!
Notes:
Feel free to add some spinach or kale for extra greens.
