vegetable broth

Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until soft, about 5 minutes.
3. Stir in the minced garlic, cumin, and paprika. Cook for another minute.
4. Add the farro, vegetable broth, diced tomatoes, and chickpeas. Bring to a boil.
5. Reduce heat to low, cover, and simmer for about 30 minutes, or until the farro is tender.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with chopped fresh parsley.
Notes:
This stew is perfect for a cozy dinner. Feel free to add other vegetables like carrots or spinach.
