Ingredients:  

Main Ingredients

  • 1 cup farro
  • 1 can chickpeas drained and rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste salt and pepper
  • 2 tbsp olive oil
  • 1 handful fresh parsley chopped, for garnish

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and cook until soft, about 5 minutes.
  • 3. Stir in the minced garlic, cumin, and paprika. Cook for another minute.
  • 4. Add the farro, vegetable broth, diced tomatoes, and chickpeas. Bring to a boil.
  • 5. Reduce heat to low, cover, and simmer for about 30 minutes, or until the farro is tender.
  • 6. Season with salt and pepper to taste.
  • 7. Serve hot, garnished with chopped fresh parsley.

Notes:

This stew is perfect for a cozy dinner. Feel free to add other vegetables like carrots or spinach.
