Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 3 cups vegetable broth
  • 2 cups diced tomatoes canned
  • 2 cups potatoes diced
  • 2 cups carrots sliced
  • 1 cup celery sliced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  • 3. Add the vegetable broth, diced tomatoes, potatoes, carrots, and celery. Bring to a boil.
  • 4. Reduce heat and add thyme, rosemary, salt, and black pepper. Simmer for 30-40 minutes until vegetables are tender.
  • 5. Adjust seasoning if needed and serve hot.

Notes:

Feel free to add any other vegetables you like.
