Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
3. Add the vegetable broth, diced tomatoes, potatoes, carrots, and celery. Bring to a boil.
4. Reduce heat and add thyme, rosemary, salt, and black pepper. Simmer for 30-40 minutes until vegetables are tender.
5. Adjust seasoning if needed and serve hot.
Notes:
Feel free to add any other vegetables you like.
