Ingredients:  

Main Ingredients

  • 2 lbs Beef stew meat cut into chunks
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell pepper chopped
  • 2 cups Beef broth
  • 1 cup Tomato sauce
  • 2 tsp Thyme dried
  • 2 tsp Parsley dried
  • 1 Scotch bonnet pepper whole
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • to taste Salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef and brown on all sides.
  • 3. Add the onion, garlic, and bell pepper. Cook until softened.
  • 4. Pour in the beef broth and tomato sauce. Stir in thyme and parsley.
  • 5. Add the whole scotch bonnet pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  • 6. Add the carrots and potatoes. Cook for another 30 minutes or until vegetables are tender.
  • 7. Season with salt and pepper to taste. Remove the scotch bonnet pepper before serving.

Notes:

For a spicier stew, you can pierce the scotch bonnet pepper before adding it to the pot.
