Scotch bonnet pepper

Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef and brown on all sides.
3. Add the onion, garlic, and bell pepper. Cook until softened.
4. Pour in the beef broth and tomato sauce. Stir in thyme and parsley.
5. Add the whole scotch bonnet pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours.
6. Add the carrots and potatoes. Cook for another 30 minutes or until vegetables are tender.
7. Season with salt and pepper to taste. Remove the scotch bonnet pepper before serving.
Notes:
For a spicier stew, you can pierce the scotch bonnet pepper before adding it to the pot.
