Ingredients:  

Main Ingredients

  • 2 tbsp Vegetable Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 inch Ginger grated
  • 1 lb Chicken Thighs cut into chunks
  • 1 cup Peanut Butter natural, unsweetened
  • 1 can Diced Tomatoes 14 oz can
  • 4 cups Chicken Broth
  • 2 cups Sweet Potatoes peeled and cubed
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 bunch Spinach fresh, chopped

Instructions: 

  • Heat the oil in a large pot over medium heat. Add the onion and cook until soft.
  • Add the garlic and ginger, cook for another minute.
  • Add the chicken and brown on all sides.
  • Stir in the peanut butter, diced tomatoes, and chicken broth. Bring to a simmer.
  • Add the sweet potatoes, salt, and pepper. Simmer until the potatoes are tender, about 20 minutes.
  • Stir in the spinach and cook until wilted, about 5 minutes.

Notes:

Serve hot with rice or bread.
