Spinach
fresh, chopped
Instructions:
Heat the oil in a large pot over medium heat. Add the onion and cook until soft.
Add the garlic and ginger, cook for another minute.
Add the chicken and brown on all sides.
Stir in the peanut butter, diced tomatoes, and chicken broth. Bring to a simmer.
Add the sweet potatoes, salt, and pepper. Simmer until the potatoes are tender, about 20 minutes.
Stir in the spinach and cook until wilted, about 5 minutes.
Notes:
Serve hot with rice or bread.
