Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onions, minced garlic, and grated ginger. Sauté until onions are translucent.
Add curry powder and turmeric. Cook for another minute.
Add chicken pieces and cook until browned on all sides.
Pour in coconut milk and chicken broth. Stir well.
Add diced potatoes and sliced carrots. Bring to a boil, then reduce heat and simmer for 30 minutes.
Season with salt and pepper to taste.
Garnish with chopped cilantro before serving.
Notes:
Serve hot with rice or bread.
