Ingredients:  

Main Ingredients

  • 1 kg Chicken cut into pieces
  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 tbsp Ginger grated
  • 2 tbsp Curry Powder
  • 1 tsp Turmeric
  • 400 ml Coconut Milk
  • 2 cups Chicken Broth
  • 2 Potatoes diced
  • 2 Carrots sliced
  • to taste Salt
  • to taste Pepper
  • 1 tbsp Cilantro chopped, for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions, minced garlic, and grated ginger. Sauté until onions are translucent.
  • Add curry powder and turmeric. Cook for another minute.
  • Add chicken pieces and cook until browned on all sides.
  • Pour in coconut milk and chicken broth. Stir well.
  • Add diced potatoes and sliced carrots. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Season with salt and pepper to taste.
  • Garnish with chopped cilantro before serving.

Notes:

Serve hot with rice or bread.
