Instructions:
1. Heat the stock pot over medium heat and add a bit of oil.
2. Add the beef stew meat and brown on all sides.
3. Add the chopped onion and garlic, cook until softened.
4. Pour in the beef broth and bring to a boil.
5. Add the carrots, potatoes, salt, pepper, and thyme.
6. Reduce heat to low, cover, and simmer for about 2 hours or until the meat is tender.
Notes:
Feel free to add other vegetables like peas or green beans.
