Ingredients:  

Main Ingredients

  • 1 kg Lamb shoulder, cut into chunks
  • 2 tbsp Vegetable oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 2 tbsp Curry powder
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 400 ml Coconut milk
  • 400 g Canned tomatoes
  • 2 cups Chicken broth
  • 2 medium Potatoes, peeled and cubed
  • 2 medium Carrots, sliced
  • to taste Salt and pepper
  • 1 handful Fresh cilantro, chopped for garnish

Instructions: 

  • Heat the oil in a large pot over medium heat. Add the onions and cook until softened.
  • Add the garlic and ginger, cook for another minute.
  • Stir in the curry powder, cumin, and coriander. Cook for a minute until fragrant.
  • Add the lamb chunks and brown on all sides.
  • Pour in the coconut milk, canned tomatoes, and chicken broth. Bring to a boil.
  • Add the potatoes and carrots. Reduce heat and simmer for about 1.5 hours, or until the lamb is tender.
  • Season with salt and pepper to taste. Garnish with fresh cilantro before serving.

Notes:

This lamb curry stew is best served with rice or naan bread.
