Coconut milk

Canned tomatoes

Instructions:
Heat the oil in a large pot over medium heat. Add the onions and cook until softened.
Add the garlic and ginger, cook for another minute.
Stir in the curry powder, cumin, and coriander. Cook for a minute until fragrant.
Add the lamb chunks and brown on all sides.
Pour in the coconut milk, canned tomatoes, and chicken broth. Bring to a boil.
Add the potatoes and carrots. Reduce heat and simmer for about 1.5 hours, or until the lamb is tender.
Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
Notes:
This lamb curry stew is best served with rice or naan bread.
