Ingredients:  

Main Ingredients

  • 1 lb Beef stew meat
  • 1 cup Lentils rinsed
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 Carrots sliced
  • 2 cups Beef broth
  • 1 can Diced tomatoes
  • 1 tsp Dried thyme
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste

Instructions: 

  • 1. In a large pot, brown the beef stew meat over medium heat.
  • 2. Add the chopped onion and minced garlic, and cook until softened.
  • 3. Stir in the sliced carrots, lentils, beef broth, diced tomatoes, dried thyme, salt, and black pepper.
  • 4. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until the lentils and beef are tender.
  • 5. Adjust seasoning if necessary and serve hot.

Notes:

Feel free to add more vegetables like potatoes or celery for extra flavor and nutrition.
