Instructions:
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the chopped onion and minced garlic, and cook until softened.
3. Stir in the sliced carrots, lentils, beef broth, diced tomatoes, dried thyme, salt, and black pepper.
4. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until the lentils and beef are tender.
5. Adjust seasoning if necessary and serve hot.
Notes:
Feel free to add more vegetables like potatoes or celery for extra flavor and nutrition.
