Ingredients:  

Main Ingredients

  • 1 cup lentils rinsed
  • 2 medium leeks sliced
  • 3 medium potatoes diced
  • 4 cups vegetable broth
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the leeks and garlic, and sauté until softened.
  • 3. Add the potatoes, lentils, vegetable broth, salt, and pepper.
  • 4. Bring to a boil, then reduce heat and simmer for 45 minutes, or until lentils and potatoes are tender.
  • 5. Adjust seasoning to taste and serve hot.

Notes:

This stew is perfect for a cozy dinner. Feel free to add other vegetables like carrots or celery.
