Ingredients:  

Main Ingredients

  • 1 lb Chorizo sausage sliced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced tomatoes (14.5 oz)
  • 2 cups Chicken broth
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 2 Potatoes peeled and diced

Instructions: 

  • 1. In a large pot, cook the chorizo over medium heat until browned.
  • 2. Add the chopped onion and minced garlic to the pot, and cook until softened.
  • 3. Stir in the diced tomatoes, chicken broth, paprika, cumin, salt, and black pepper.
  • 4. Add the diced potatoes and bring the stew to a boil.
  • 5. Reduce the heat and let it simmer for about 30 minutes, or until the potatoes are tender.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like bell peppers or carrots for more flavor and nutrition.
