Instructions:
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the chopped onion and minced garlic, cook until softened.
3. Pour in the beef broth and bring to a boil.
4. Add the chopped carrots, diced potatoes, salt, pepper, and thyme.
5. Reduce heat to low, cover, and simmer for 2 hours.
6. Serve hot and enjoy!
