Ingredients:  

Main Ingredients

  • 500 g Chicken thighs cut into pieces
  • 2 cups Chicken broth
  • 1 cup Carrots sliced
  • 1 cup Potatoes diced
  • 1 tbsp Soy sauce
  • 1 tsp Ginger minced
  • 2 cloves Garlic minced
  • 1 tbsp Cornstarch mixed with 2 tbsp water
  • to taste Salt and pepper

Instructions: 

  • 1. Heat a pot over medium heat and add a bit of oil.
  • 2. Add the chicken pieces and cook until browned.
  • 3. Add the garlic and ginger, cook for another minute.
  • 4. Pour in the chicken broth, soy sauce, carrots, and potatoes.
  • 5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 6. Stir in the cornstarch mixture and cook until the stew thickens.
  • 7. Season with salt and pepper to taste.
  • 8. Serve hot.

Notes:

Feel free to add other vegetables like bell peppers or peas.
