Ingredients:  

Main Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cups coconut milk
  • 1 cup diced tomatoes
  • 1 cup fish stock
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup cilantro, chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and bell pepper. Cook until softened.
  • Add the minced garlic and cook for another minute.
  • Pour in the coconut milk, diced tomatoes, and fish stock. Bring to a simmer.
  • Add the shrimp, salt, and black pepper. Cook until the shrimp are pink and cooked through.
  • Stir in the chopped cilantro and serve hot.

Notes:

For a spicier stew, add some chopped chili peppers.
