Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and bell pepper. Cook until softened.
Add the minced garlic and cook for another minute.
Pour in the coconut milk, diced tomatoes, and fish stock. Bring to a simmer.
Add the shrimp, salt, and black pepper. Cook until the shrimp are pink and cooked through.
Stir in the chopped cilantro and serve hot.
Notes:
For a spicier stew, add some chopped chili peppers.
