Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 lb chicken thighs, boneless and skinless cut into chunks
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 can chickpeas drained and rinsed
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup fresh parsley chopped, for garnish

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chicken and cook until browned on all sides. Remove and set aside.
  • In the same pot, add the onion and garlic. Cook until softened.
  • Add the cumin, coriander, and paprika. Stir to combine.
  • Return the chicken to the pot. Add the chickpeas, diced tomatoes, and chicken broth.
  • Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Garnish with fresh parsley before serving.

Notes:

Serve with crusty bread or over rice for a complete meal.
