chicken thighs, boneless and skinless
cut into chunks

onion

paprika

chickpeas
drained and rinsed

diced tomatoes

chicken broth

to taste

black pepper
to taste

fresh parsley
chopped, for garnish
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chicken and cook until browned on all sides. Remove and set aside.
In the same pot, add the onion and garlic. Cook until softened.
Add the cumin, coriander, and paprika. Stir to combine.
Return the chicken to the pot. Add the chickpeas, diced tomatoes, and chicken broth.
Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
Garnish with fresh parsley before serving.
Notes:
Serve with crusty bread or over rice for a complete meal.
