Ingredients:  

Main Ingredients

  • 1 lb Beef stew meat cut into cubes
  • 2 cups Low sodium beef broth
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 1 tsp Black pepper
  • 2 cups Potatoes diced

Instructions: 

  • 1. In a large pot, brown the beef stew meat over medium heat.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Stir in the tomato paste, dried thyme, dried rosemary, and black pepper.
  • 4. Pour in the low sodium beef broth and bring to a boil.
  • 5. Reduce heat, cover, and simmer for 1 hour.
  • 6. Add the sliced carrots, celery, and diced potatoes. Simmer for another 30-40 minutes or until vegetables are tender.
  • 7. Adjust seasoning if needed and serve hot.

Notes:

This stew is perfect for a cozy dinner and is heart-healthy with reduced sodium.
