Ingredients:  

Main Ingredients

  • 2 lb Beef chuck cut into cubes
  • 2 tbsp Olive oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Beef broth
  • 1 cup Ale
  • 3 large Carrots sliced
  • 2 large Potatoes diced
  • 2 tbsp Tomato paste
  • 2 tsp Thyme dried
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the beef and brown on all sides. Remove and set aside.
  • In the same pot, add the onion and garlic. Cook until softened.
  • Return the beef to the pot. Add the beef broth, ale, carrots, potatoes, tomato paste, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 2 hours, or until the beef is tender.
  • Serve hot and enjoy!

Notes:

This stew tastes even better the next day!
