Instructions:
1. Season the goat meat with salt, black pepper, and half of the curry powder. Let it marinate for at least 30 minutes.
2. Heat the vegetable oil in a large pot over medium heat. Add the remaining curry powder and toast for about 1 minute.
3. Add the goat meat to the pot and brown on all sides.
4. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.
5. Pour in the water and coconut milk. Add the thyme and Scotch bonnet peppers. Bring to a boil.
6. Reduce the heat to low and let it simmer for about 2 hours, or until the meat is tender.
7. Adjust seasoning with salt and black pepper to taste. Serve hot.
Notes:
This curry goat stew is best served with rice or roti.
