Ingredients:  

Main Ingredients

  • 2 lbs Goat meat cut into chunks
  • 2 tbsp Curry powder
  • 1 tbsp Vegetable oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 inch Ginger grated
  • 2 cups Water
  • 1 can Coconut milk
  • 2 sprigs Thyme
  • 2 whole Scotch bonnet peppers optional
  • to taste Salt
  • to taste Black pepper

Instructions: 

  • 1. Season the goat meat with salt, black pepper, and half of the curry powder. Let it marinate for at least 30 minutes.
  • 2. Heat the vegetable oil in a large pot over medium heat. Add the remaining curry powder and toast for about 1 minute.
  • 3. Add the goat meat to the pot and brown on all sides.
  • 4. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.
  • 5. Pour in the water and coconut milk. Add the thyme and Scotch bonnet peppers. Bring to a boil.
  • 6. Reduce the heat to low and let it simmer for about 2 hours, or until the meat is tender.
  • 7. Adjust seasoning with salt and black pepper to taste. Serve hot.

Notes:

This curry goat stew is best served with rice or roti.
