large onion, diced

green bell peppers, diced

green chilies, roasted and chopped

vegetable broth

diced tomatoes

ground cumin

black beans, drained and rinsed

corn, drained
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the diced onion and cook until translucent, about 5 minutes.
Stir in the minced garlic and cook for another minute.
Add the diced green bell peppers and cook until softened, about 5 minutes.
Stir in the roasted green chilies, vegetable broth, diced tomatoes, ground cumin, dried oregano, and salt. Bring to a boil.
Reduce the heat and let it simmer for 30 minutes.
Add the black beans and corn, and cook for another 5 minutes.
Serve hot and enjoy!
