Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 green bell peppers, diced
  • 4 green chilies, roasted and chopped
  • 2 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and cook until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Add the diced green bell peppers and cook until softened, about 5 minutes.
  • Stir in the roasted green chilies, vegetable broth, diced tomatoes, ground cumin, dried oregano, and salt. Bring to a boil.
  • Reduce the heat and let it simmer for 30 minutes.
  • Add the black beans and corn, and cook for another 5 minutes.
  • Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner and can be stored in the fridge for up to 3 days.
