Instructions:
Heat the oil in a pan over medium heat.
Add the chopped onions and sauté until translucent.
Add the chopped tomatoes and cook until soft.
Stir in the tomato paste and cook for another 2 minutes.
Add the chopped bell pepper, salt, and black pepper. Cook for 5 minutes.
Pour in the beaten eggs and stir continuously until the eggs are cooked through.
Serve hot with rice or bread.
Notes:
Feel free to add other vegetables like spinach or carrots for extra nutrition.
