Ingredients:  

Main Ingredients

  • 4 Eggs beaten
  • 2 tbsp Vegetable Oil
  • 1 Onion chopped
  • 2 Tomatoes chopped
  • 1 tsp Tomato Paste
  • 1 Bell Pepper chopped
  • 1 tsp Salt or to taste
  • 1 tsp Black Pepper or to taste

Instructions: 

  • Heat the oil in a pan over medium heat.
  • Add the chopped onions and sauté until translucent.
  • Add the chopped tomatoes and cook until soft.
  • Stir in the tomato paste and cook for another 2 minutes.
  • Add the chopped bell pepper, salt, and black pepper. Cook for 5 minutes.
  • Pour in the beaten eggs and stir continuously until the eggs are cooked through.
  • Serve hot with rice or bread.

Notes:

Feel free to add other vegetables like spinach or carrots for extra nutrition.
