Ingredients:  

Main Ingredients

  • 2 cups Leftover lamb, diced
  • 1 cup Carrots, diced
  • 1 cup Potatoes, diced
  • 1 cup Onions, chopped
  • 3 cups Beef broth
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • to taste Salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the onions and garlic, and sauté until softened.
  • 3. Add the carrots and potatoes, and cook for a few minutes.
  • 4. Pour in the beef broth and bring to a boil.
  • 5. Reduce the heat and add the leftover lamb, thyme, rosemary, salt, and pepper.
  • 6. Simmer for about 30 minutes, or until the vegetables are tender.
  • 7. Serve hot and enjoy!
