Leftover lamb, diced

Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onions and garlic, and sauté until softened.
3. Add the carrots and potatoes, and cook for a few minutes.
4. Pour in the beef broth and bring to a boil.
5. Reduce the heat and add the leftover lamb, thyme, rosemary, salt, and pepper.
6. Simmer for about 30 minutes, or until the vegetables are tender.
7. Serve hot and enjoy!

Great way to use up leftover lamb and make a comforting meal.
